A la hembra se le extrae el saco ov\u00e1rico, se limpia cuidadosamente y los huevos primero se salan y luego se secan durante al menos 90 d\u00edas en un complejo sistema de tablas de madera cargadas con piedras. A continuaci\u00f3n, se limpia la bottarga del exceso de sal, revelando su color oscuro que tiende casi al dorado. \u00a1Es precisamente este proceso el que hace de la bottarga un ingrediente especialmente valioso y utilizado en la cocina con gran parsimonia! Entre todas las variedades de bottarga, la de salmonete es sin duda la m\u00e1s valiosa y por eso tambi\u00e9n se le llama &#8220;caviar del Mediterr\u00e1neo&#8221; u &#8220;oro de Cerde\u00f1a&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Debido a su rico y fuerte sabor, la bottarga se suele rallar en peque\u00f1as cantidades en primeros platos a base de pescado. Una forma alternativa de degustar este producto es cortarlo en rodajas muy finas y comerlo con tan solo un chorrito de aceite de oliva virgen extra como condimento.
