Puedes sustituir parte de la harina de trigo por la misma\u00a0<strong>harina de casta\u00f1a<\/strong>: crear\u00e1s un\u00a0primer plato\u00a0original y de sabor delicado, para condimentar con mantequilla y salvia o una crema a base de champi\u00f1ones.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Para obtener&nbsp;<strong>\u00f1oquis suaves<\/strong>&nbsp;e impecables, elige&nbsp;<strong>patatas blancas<\/strong>&nbsp;o&nbsp;<strong>amarillo<\/strong>; lo importante es que sean&nbsp;<strong>viejas<\/strong>: la riqueza en almid\u00f3n har\u00e1 que uses menos harina para la masa. Evita las patatas tiernas porque al ser muy aguadas te obligar\u00e1n a utilizar m\u00e1s harina y los \u00f1oquis quedar\u00e1n duros. Para evitar esta eventualidad, es importante tener un control experto de la masa: demasiada harina las endurecer\u00eda, mientras que un amasado excesivo podr\u00eda hacerlas blandas y desagradables: por este motivo, tendr\u00e1s que&nbsp;<strong>Amasar la mezcla r\u00e1pidamente<\/strong>&nbsp;mientras las patatas a\u00fan est\u00e9n calientes.
